Intentful Spaces


This is my first “Cook With Me” video! On this day I made dinner out of some stuff we happened to have in the kitchen.

My family is completely vegetarian (I have been for about 15+ years). We do eat vegan sometimes, but not all the time. We do have small amounts of dairy. (And my husband loves eggs.) On this day the meal just so happened to be vegan.

I had a large sack of potatoes, so I just chopped them up and roasted them with some garlic powder and tarragon. And then I added the asparagus and broccoli I had picked up because it was on sale at Sprouts when I went to grab some vitamins. Just a quick, simple, plant based, weekday dinner. This can also just be used as side dishes to add more vegetables to the plate. Often the “sides” are what vegetarians make a meal of.

These potatoes are seriously SO GOOD. I don’t even use any sauces, the seasoning is that flavorful. And with vegetables the portions can be as large as they need to be to fill you up, the more, the better. (Ok…mindful of the oil though.)

DIRECTIONS:
Wash then chop potatoes.

OIL / SEASONING POTATOES:
With potatoes in a large bowl, add a bit of oil and stir.
Then add a generous amount of dried tarragon and garlic powder.
Spread evenly onto a large baking sheet.
Bake at 400° F for about an hour.
Pull them out to toss them 2-3 times during baking time.

NO OIL POTATOES:
Line baking sheet with parchment paper.
Spread potatoes evenly on baking sheet.
Bake at 400° F for about an hour.
Toss 2-3 times during cook time.
(Flipping each piece at least once.
This ensures that both sides brown evenly.)

BROCCOLI & ASPARAGUS:
Chop broccoli and cut bottoms off of asparagus then wash.
Spread asparagus evenly on a baking sheet.
Spread broccoli evenly on a baking sheet.
Drizzle a very small amount of oil over both and toss to coat.
Add a bit of tarragon and a very little bit of salt.
Bake at 400° F for only up to ten minutes.
